My dioscorea elephantipes just arrived, it is half an inch thick and just under an inch in width. I planted it in a soil mix of around 70% inorganic material and wetted the soil slightly before planting. Should I fully bury the caudex at this point or should I leave it as it is? And is the pot size too large despite online sources saying that they need a larger pot than expected?

They don’t like to be buried and there’s no benefit to burying them. Also, might not have been a great idea to water it since it’s dormant at the moment.
If you’re in the northern hemisphere most of them are dormant. You can water lightly but this is when there’s a danger of rotting the caudex.
Overpotting is fine, just remember it will retain moisture longer.
D. Elephantipes don’t always follow seasonal dormancy, so don’t be surprised OP if they come out of dormancy at random times.
