I've always grafted with just one branch (as in photo 1).

To save space, could I graft onto several branches of my pereskiopsis? Like graft in every branch of those pereskiopsis on the other photos?

You could, but if you just want to save space I think it’s better to just plant different grafts in a single pot

  2. I’d be worried about multiple grafts essentially competing for energy from the main stem of the pere, causing your scions to grow slower or stall out. It’s just my theory and I could be wrong.

As the other comment said, you may be better off propagating the other pere branches in one pot, and then grafting on those. At least that’s what I do.

BE A PIONEER!! If you’re not “the first” you’ll never win a Nobel prize! 🏆 Maybe look at it this way; a car with 100 hp or a car with 500 hp. I feel like some of the graft stock we commonly use is in the 500hp range and we never really “put the pedal to the metal” and see what that baby can do!! Slap it and run with it!!

Edit: just be aware that 500hp runs on high octane and requires more of it!!

You can but I would be inclined to cut and root each branch.
