This is my first season container gardening and I have a question about cucumbers. I have this 16 in pot (my husband has drilled holes in the bottom).. my question is should I transplant only one cucumber plant in this size pot? Or would two be okay?

Definitely only one
One only.
It will rely on you for all of its needs.
Giving it as much space for roots, water and nutrition in the soil as possible is your best bet. It will get you a healthier plant and more/bigger fruit.
Of course assuming you will water and fertilize on a good schedule.
