We harvest FRESH Food all year round from our gardens here in the South of England. This is a real life harvest tour and chat, sharing what it is possible to harvesting fresh from the ground in mid Winter in the UK.
We are Dan & Laurie and our land is called Freedom Forest – Its 3 acres in the South of England where we are creating an edible oasis and trying to provide as much for ourselves, from our land as possible, where we are completely off grid.
Our food growing journey began together in 2017 when we created our first No dig lasagne bed. Every year we grow more and more and now we are currently around 60-80% self sufficient in ALL of our food needs.
Our style and methods are inspired by permaculture and we try to be thoughtful about how and what we do, to be as gentle on the planet as possible.

My harvest was much much smaller, two turnips, two tiny heads of broccoli (which began to develop end of last year due to unseasonable changes) & a few carrots. Have also harvest lettuce and we harvest rosemary & bayleaves all year 😊

I'm battling hungry pigeons each day at the moment for the taunton dean kale leaves – the plants are just about maintaining a regular crop at probably their lowest production month of the year. Definitely take a few cuttings of yours to help regenerate. I actually lose one or two plants each winter to the frost, so always keep a load of reserves on the go.
Radish leaves are one of the few outdoor winter salad crops that i'm still harvesting now. The leaves do get a little tough, but anything's welcome at this time of year.
I am also 'self sufficient' in jerusalem artichokes. Would once again recommend fermenting a few in a jar. No need to peel them, just scrub most of the soil off, roughly chop and add to some brine in a kilner jar for a few weeks. The sweet funky taste is a real joy at this time of year.
Yacon harvest is still going strong. I only have the white tubers and i find after a few weeks curing they are plenty sweet enough, so goodness knows what i'd make of the cured red ones.
And, finally got hold of some mashua tubers, so they're now in pots starting to sprout. Looking forward to their foliage display and salad leaf harvests in due course, but not convinced i'll enjoy eating the tubers.
ps – your soil looks superb. Even on my best no dig bed i tend to have to use a trowel.

Love the perennial kale. I took cuttings last year as it had been growing like a triffid in the greenhouse – sadly covered in whitefly so I took it outside – only to be chomped by slugs. I've given a plant to our neighbours because even if they don't like it – their chickens will. Ours love the big leaves, as do our ducks.
I've got a cold frame with lettuce growing in it. Lettuce actually does fine in freezing temperatures as long as frost doesn't touch the leaves. So, we're going out and harvesting lettuce on snowy days.
Look at that smile! That is a smile of happiness!! Happiness = owning your own property and growing your own food!! You have a very elaborate setup!! Clearly a lot of hard work has gone into it!! Well done!! And enjoy your harvest!!

Sadly both my red and yellow yacon got demolished by the snails last year. Now ave to wait until next year to afford to re-purchase. However, we've enjoyed our oca very much and have harvested the last batch yesterday. They were delicious as always. And we've saved some for replanting🌱🌱
I need to work on my winter game! I say that every year and it's improving
