Learned the lesson, picked up a small portion of moss last week and it has fungus/mold.. Should I remove that moss entirely? There’s already a layer of activated carbon

Mold is a normal and important facet of the setup; as is cleanup crew. Manual removal will only delay the inevitable unless you have springtails.
