You ca;just plant carrots in the fall, let them overwinter, and pick half in the late Spring. Leave the other half in the soil to bolt when it gets really hot in late June and July, and then they’ll begin growing seeds ready for harvesting by Aug/Sept. I do this every year.

Question: What flower doesn't grow a seed? Or a fruit that has seeds. Like isn't that the whole point of flowers? I guess there are the GMO fruits that are seedless: bananas come to mind…

Carrots are a tap root. Roots don't grow more roots. Let flowers die naturally to harvest the seeds that's when they are meant to reseed.
You know there's a whole branch of biology that covers this process. Its called botany.
