โ–บ [RECIPE] Pickled Nasturtium Seeds

Collect nasturtium seeds when they become small and green.
Make a brine of one quart water mixed with 1/2 cup salt.
Soak them in brine to cover.
Renew the brine every 3 days until enough seeds have been collected.
Drain seeds and pack them in small jars.
Pour over enough boiling white wine vinegar to cover, seal and store for about a week before using.
Use as a spicy-piquant substitute for capers in any recipe.

  1. Im in New Mexico and my nasturtiums are in pots. One in a big pot with some cosmos is HUGE like yours but few flowers. The other 2, in smalller pots arent big, look a bit ratty but are full of flowers! I keep pulling off the seeds so they dont spend energy on them. the seeds are so big, amazing.
