Can I just cut off the squishy part of the scion or is it all lost?

Yeah, that’s rot. Chances are, it’s all the way through but you can certainly try to cut off all the rotten parts and then wait whether anything happens. I’ve had failed grafts that produced pups from tiny remaining bits of the scion.

I’ve had creep like this stop in its tracks and the rest of the scion is preserved fine. I’ve also had these shrivel up and die. Agree with the commenter suggesting to cut if the rot is severe. Good luck OP!

I usually wait till it’s all dried out. I’ve had some scions half die and the other half live and throw a pup

That looks like a nice piece you were trying to graft and a well cut stock. Did you remember to sterilize your knife / was that stock woody or juicy?
