2.5 weeks post top dress and first mow before and after. I have been watering 10 minutes morning and night daily (Adelaide Australia). Should I cut that back now? (Windsor Green)

This grass likes to be kept relatively short. I believe the maximum it should be kept at long term is 3cm – and lowest 1cm. Therefore, check the height at the highest spot and keep it at 3cm, until it is uniformly at that height. After that you can reduce the HOC, if you want.
Remember though, avoid cutting off more than 1/3 of the grass’ current height. So if it is let’s say 5cm at the highest point right now, better only cut down to 3,5cm. And then a week later to 3cm.
Also, was it just top dressing, or also aerating you did? If you also aerated, the grass is really stressed and should be allowed to stay at a longer length for a while to properly recover.

no one addressed watering times. short daily watering is bad for root systems. normally, its like 1-3 days a week, for 20-45 minutes, depending on seasonal needs. but daily is never good except for new sod.
10 minutes is not enough to soak your roots at all, unless its pure sand. thats equal to maybe 1/8″ of water.
and, shallow watering trains shallow roots. meaning your lawn gets weaker over time. infrequent high duration. i cant speak to australia specifically, but your buffalo grass is our st augustine, which is what i work with mostly. id assume water needs are similar based on climate as well
