In this video, I make one of our favorite collard greens recipes: Congolese collard greens. What makes this recipe special is the peanut butter. It turns collard greens into a real treat.
Ingredients:
1.5 lbs collard greens
1 onion
1 tomato
1/2 cup peanut butter
salt and pepper to taste
Instructions:
– remove the collard green stems
– rinse the greens
– chop the greens finely
– dice the onion
– dice the tomato
– place 1 cup of water and the collard greens in a pot
– place the pot on a med/high heat, cover, and cook for 10 minutes, stirring frequently
– add more water if needed to prevent sticking
– add the onion and tomato, cover, and cook for 10 more minutes stirring frequently on medium heat
– add 1/2 cup peanut butter and season to taste with salt and pepper
– lower heat to low and simmer for 5 more minutes, stirring frequently
– enjoy!
