Hey ya’ll, I’m Jess from Roots & Refuge Farm

Welcome to a place that feels like home. A small farm with a big family. We hope you’ll pull up a chair, grab some coffee and visit awhile.

There was a time that all I wanted in the world was a little farm where I could raise my family and grow our food. Now, that is exactly what exists outside my door. In watching it unfold, a new dream was formed in my heart – to share this beautiful life with others and teach them the lessons we’ve learned along the way. Welcome to our journey, friend. I am so glad you’re here.

  1. You could roast the pumpkins that were left out during the frost amd puree them and freeze so they don't rot and jeep the others for fresh eating.

  2. I don't want to sound like a broken record, but have you tried steaming and freeze drying pumpkin and then powdering it for pumpkin bread? I just put the powder in a jar and vacuum seal it and store in my cold storage room.

  3. I love that you wanted to have “all the pumpkins” for a while. Exactly my sentiments, but. Would put them in my living room and place them all around me.😊

  4. You can also cook up the pumpkin and freeze dry it! Works really well, either as chunks or blended!

  5. What a great harvest of pumpkins! You actually can pressure can cubed pumpkin. I canned 24 quarts of pumpkin almost 2 years ago. We have 6 qts left and they're all still good. I do need to use them up soon though. Food Preservation is awesome.

  6. we dropped down to 25 for 2 nights in a row. my peppers and tomatoes are thriving still, i didnt cover them or nothing. i was shocked.

  7. Would taking off the shade cloth allow more sun during the day to increase the warmth in the high tunnels?

  8. My favorite pumpkin dish is pumpkin in a sour creamy sweet mustard sauce to eat with rice or bread or polenta or whatever you like. In a large pan saute some onions (optionally with some finely diced mushrooms), add diced pumpkin and then after 2-3 min fill up with a little water (optionally replace some of it with white wine or veggie broth), cover with a lid and cook until soft enough. Pour over a mixture of sour cream, sweet mustard with full or at least still visible mustard seeds, honey, and lemon to taste. Gently stir it in and serve right away with something green on top. My favorite dish my mom found in a old German organic cookbook when I was little.

  9. I pressure can cubed pumpkin pieces and it’s approved. I know they say don’t do pumpkin puréed or butter but you can buy it in the store 🤔

  10. I’m sad to see my garden finished but happy I pushed some harvesting past October 5th for the first time. I’m planning on another expansion. Three more beds, three more whiskey barrels. After a year of max capacity I’ll ponder on moving the garden fence again. I’m highly considering it. It would double my garden if I did. Not as big as yours but it would be 2,000 square feet if I expanded again.

  11. Work smarter, not harder….girl, you worked hard enough bringing those boys into this world! The LEAST they can do is the heavy lifting now that they can! 😂😂 No really, I have a lot of nephews and my own sweet boy, and I’ve never seen a boy happier than when he is showing off his strength!

  12. RuthAnn Zimmerman just made a great video on how she cans pumpkin and explains why she and her family are comfortable with it, it was really interesting!
