I have these hardy kiwi vines that are only 3 years old and this is their first year fruiting. Between that and the fact that summer here in Ireland has been wet, grey and miserable, the kiwis are like little rocks. I would have thought to compost them or simply chop and drop to get the nutrients back in the soil but happened to scroll by a random YouTube short of a guy taking some unripe fruit (can’t remember what type, maybe some kind of berry) and filling the jar with the fruit and sugar to let sit. After a few weeks the sugar had drawn moisture out of the fruit and turned into a syrup. Would that work with these, or any other suggestions?
