  3. I cook for one so one of my favorite things to make are 'bowls'. They work well with leftovers. For example: I am able to throw in some greens, beans, a little meat and a little rice. Top it with a little cheese or sour cream or dressing. So quick and easy.

  4. We love those little potatoes! I love the purple ones. It's very nice to see you! We are also eating more nourishing foods. Not keto not anything specific. Just good choices. And we don't beat ourselves up if we have a treat!

  5. Zucchini lasagna is new to us, but we really enjoyed it. Sliced and froze a bunch of strips of zucchini for winter lasagna. We’re like you a bumper crop of zucchini. Nice to see the video.

  8. It's really good to see you again. 😊 Favorite healthy meal is spinach salad with diced chicken, grilled onion and zucchini. Add diced mango or strawberries, and feta cheese crumbled on top. Yummy!

  9. For a nutrient dense snack we like cheese and crackers. We do raw cheese because I can get it cheaper from Azure but good old Cabot works too. I eat sourdough or soaked crackers. The kids on the other hand like nasty old ritz or saltines 🤭 At least they are getting the good cheese, right?

  10. Another alternative for the vanilla coffee creamer is the Barissimo Delightfully Pure Coffee Creamers at Aldi. I like the vanilla and sweet cream.

  13. We are eating more healthy foods too. Fruit is really helping with snacks. Cherries, peaches, watermelon and cantalope. I heard a nutritionist on youtube recently say, our bodies are not looking for taste, what food looks like etc., but for nourishment. Health problems are so costly anymore it doesn't make sense to be overweight and cause more costs. This inflation is really making us see that.

  15. Glad to see you back. When it's too hot to even bresathe (humidity) I don't like to even think about cooking. Vanilla yogurt topped fresh fruit and granola sounds good.

  17. I love your grocery hauls! Saturday me is different too, I’m a mortgage processor and it’s a little slow right now so I’ve been able to really get creative with my dinners. 😂

  18. I hear ya on the grocery prices! So nice to have all the fresh produce in the summer! Great menu plan! Everything looks delicious! I too am happy meal planning and then work week comes along and I’m exhausted as I’m working 50 to 55 hour work weeks too, so I can go on vacation in September!
