Ichiban Eggplant harvest this morning, 6 Eggplants, 2.82lbs not bad for a first time gardener. What do you think?

    Mmmmmm, roasted them up and eat with just some salt and pepper. I know there’s lots of cool recipes, but I adore fresh roasted eggplant.

    Great! I love ichibans!

    I like them sliced in half and scooped out. Then stuffed with eggplant-middles, chopped tomatoes, basil, garlic, salt, and olive oil, and cooked in the oven. Yum!!!

    Eat them quickly. In my experience they start to go soft after a day or two.
