In my greenhouse I often have a few plants left over after the main crop has been harvested, I let these ones flower and go to seed. This year I dug over the beds with some compost and fertiliser, watered but didn’t sow anything. Now I have good crops of coriander, lettuce, tomatoes, Tat soi, Mizuna, even a few chives. There is some Borage and Queen Anne’s lace (Ammi majus) that came in with the compost. It is winter here in Australia but the heat from the greenhouse gets things germinating early, and protects from frost.
