Deer. Well when we first moved here into the country and built our house I vowed to accept the critters that were already here. Deer being among the population. They will eat anything. I cage and fence everything I plant. Otherwise the deer will eat it. It doesn't matter if the deer left it alone for years. The younger generation is just learning and they will try it. Even eating the tips off spruce trees. Donna, most of the plants you recommend are, indeed, deer resitant. But they are not the ones I mostly want them to not eat. My deer love the blossoms of the coneflower. They even jumped a fence to taste the leeks. But you are right, they don't like the intense flavors of most herbs and onions. I grew tomatoes for years without the deer even considering them. Now they eat the tomatoes if they can reach them. Normally they won't eat "fuzzy" leaf plants but last year they even took bites out of my cucumbers as well as my peas.
Another interesting story about critter resitant plants, if you don't mind. I used to plant marigolds around my beds to deter the rabbits. Because folklore says that will work. One day I looked out and there was a rabbit happily devouring those beautiful, anti-rabbit marigolds. I guess critters are like people. We eat what we can get and will adapt to most anything! I agree with your list and it is hard to tell what they will and will not eat. I find that if I allow my perennials to grow in pots the first season, allow them to get woody stems, and then plant the outside, the deer will leave them alone next year. Direct sow, I have had luck with daffodils, rosemary, and all types of decorative grasses. I have been experimenting for 15 yrs at my house.

I've never had trouble with deer, but I bet its because of my 3 timber
wolf malamute cross breeds. I actually like having the deer come around as it cut down on my feed bill. 😉
