  7. Just a thought to toss out to you… You could rent out the kitchen and refectory to a chef/restauranteur. He/she can have input in the design of the kitchen, and decor of the refectory. Which would help you.
    And with your role as landlord rather than as proprietor, you are not responsible for keeping up with health codes, managing staff, buying and food prep, etc. regarding the kitchen and it's use. That would be on the restauranteur.
    And they would assume any liabilities that come with running a restaurant/event center.
    Another thing to consider is to establish an organic kitchen garden to supply the kitchen with fresh produce.
    That gives an additional purpose to the garden and greenhouse, for their restoration.
    It would simplify your life, in this regard.

  9. I completely agree with the columns. If you’re all the time, money and effort into bringing it back then why take the chance on the beam going. Also agree on cleaning up before leaving and coming into a clean area. If not it would be like getting up to a kitchen full of dirty dishes, pots and pans. Ruins your day.

  10. To answer Sean's question… The next thing you should pull down is the unsightly, relatively recently added confessional off of the chapel that blocks the window to the chapel and may cover the stairs down to the crypt. Keep the demolition mode going! Please.

  11. Then you will have the experience to do the chateau kitchen! Might want to consider a small kitchen shower also…shower was very helpful in an emergency situation at another group large kitchen – not really commercial, but close.

  12. Keep Cracking On!!! from TEXAS!!!!! My whole family lives in England, but I live in Wichita Falls, Texas. A very tiny town by Oklahoma. As soon as I get a chance to come visit that way I would love to pop in one day to just help you guys out with stuff. I would love to wheelbarrow stuff around or even demo something or paint etc… Keep doing what your doing! The world loves that your making this part of the world again. We love watching your progress and your WILL to strive. Your blessed!   14. Perhaps the new kitchen at the convent could be fitted out as a school for Culinary Education? A video production facility could be located above the kitchen.

    Here in the U.S. we have a program on Public Television called., “American Test Kitchen” where different recipes a tried.

    “The Convent’s at Ernee” could also contain a small B&B, A relaxing Spa, How about a Mexican Restaurant serving tacos and burritos?

    OH, and lets not forget about the apartments.

    AND Billy and Gwendoline sit back collect the income from the leases.

  15. What a wonderful great room. Kitchen, bar, dining and living room and a games table all in on room. Reading area with bookcases in a corner. I'd put a 7 ft or 8ft sofa in front of the fireplace with loveseats and end tables on either side. Massive coffee table. I can be such an amazing room and hold many functions at once. A room for entertainment and food.

  16. The columns sound great and will introduce the possibly of many uses to possible buyers. The 'belt AND braces' approach is also such a good idea in terms of longevity.

  20. You and your team are doing a great job, Billie. Just one observation, make sure that all of the team are wearing appropriate PPE when filling the wheel barrow and sweeping up. Want all of you to live long healthy and productive lives!

  21. Personally, I would use I beams to make sort of a cubic structure (without the horizontal bottom ones). In the middle a big kitchen island with a big hood extractor hanging from the posts. Its usefully to the lighting and power too. It would look industrial as a contrast to the coziness provided by the fire place and some wood crockery /glassware cabinets. that would be a very functional kitchen with lots of space to walk around. Maybe It could be used to cater events or even record some cooking show.

    It's like a modern good looking cooking system instalment inside a great old kitchen.

My family built our 2 story house in the USA and put electric plugs at the ceiling for hanging lamps, connected to a switch, made sure there was at least one other ground level plug connected to a switch too (not necessarily the same one) … not sure what you want to do if you put in lights/chandeliers that are set up to be lowered for cleaning and repairs

Given that the Convent's original beams are likely to be Oak, if you wanted to consider an alternative to those metal supports you showed us, you could also think about Oak beams from a reclamation yard or new Oak to be used as upright supports. The wood alternative should blend nicely with the original woodwork and could, if necessary, be aged to match providing a bit of an antique rustic feel.
