Let’s make homemade pickled jalapeños. The recipe is just a guideline that can be adjusted according to taste.
250ml vinegar
250ml water
30ml sugar
30ml garlic
5ml salt
5ml cumin
5ml pepper
-Bring to boil and then simmer for a few minutes
-Cool
-Place in clean jar with sliced jalapeños

If and when I have a spot that gets enough sun, I'll try growing veggies. Actually, I like this recipe. What sold me besides the jalapenos was the garlic. I love garlic. Your hotdog resembled a a drive in restaurant where I grew up. The place was called MR. WEENIE (HONME OF THE FOOT LONG HOTDOG)! There was a CHARACTURE of a neon lighted happy weenie on the side waving at you from the road! The hotdog was just like any other hotdog, just super long and skinny. The bun was long too. Your pickled jalapenos would really spice up the flavor of Mr. Weenie!!! 😁❤👍🌸🌹.

I've found Jalapenos to vary in heat quite a bit. I've bought them at the grocery store, out of the same pile, on the same day, and some will be very mild and others quite deadly.
Interesting to see the challenges you have to deal with in terms of ingredients in Japan. I now use plastic gloves on my 'holding' hand since the day I ended up with a really hot hand from prepping jalapenos for some cornbread muffins. Nice results.
I grew jalapeños this past summer for the first time. I didn’t think about pickling them, I just threw into the freezer whole for later use. Biggest problem I had was that stupid squirrels kept stealing them! And they were spicy ones!
I make refrigerator cucumber pickles in a very similar way, except I put the brine (water, vinegar, kosher salt) on while hot. Let cool, then refrigerate.

It's probably first time when I see jalapenos grow. They are very pretty.
It's very odd how the Japanese pickle a lot of foods but white vinegar is so scarce. I canned about 10 jars of pickled jalapenos summer of 2021. My jalapenos just didn't produce very well this year so I froze them to be used in salsas and chili.

You should let a few peppers dry up on the plant and use those to get your seeds.
That was a LOT more than 2 cloves of garlic lol. Not that that's a problem with me. You can never have too much.
