Normally for Thanksgiving, my family and I eat a turkey that I have roasted in the oven. While it comes out tasty and favorable, it is always dry. This year I decided to try try something different. I spatchcocked the turkey – cutting the backbone out and reserving that for stock, and then brined the turkey overnight for 12 hours. The next morning, I removed the turkey from the brine, rinsed it off, dried it, and then seasoned it with a bbq poultry seasoning. I smoked it at 275 degrees in my Traeger for four hours. It was the best turkey I have cooked. I will be doing all my turkeys like this in the future.
