There are lots of different kale cultivars to choose from. Hannah grows β€˜Curly’ kale for its sweetness and crunchy texture. She also grows them as a perennial by only harvesting the mature outer leaves and letting them develop a tall thick stem with newer leaves left untouched on top.

The leaves are super versatile, great for stir-fries, soups, salads and more. When you have a glut, kale chips are an easy and tasty snack to make so nothing goes to waste.

Ingredients:
– Kale leaves
– Olive oil

Method:
1. Wash kale well, aphids are often hiding it the curled bits!
2. Cut off the thick stems, pop them in the compost.
3. Break the leaves into bite size pieces.
4. Drizzle the leaves in olive oil.
5. Add your choice of flavourings, such as tamari, salt, pepper, crushed garlic or other herbs and spices.
6. Massage the leaves to ensure the oil and flavours coat them completely.
7. Put a single layer of kale pieces onto a baking tray. If they overlap too much they won’t get crispy.
8. Pop in the oven at 200 degrees. Do not leave unattended! They can burn easily so check after 5 minutes and then every minute after to take them out as soon as they are brown and crispy.
