Like most other things in life, locals have the habit of naming only those that they know or are familiar with, and what they do not know they do not have a name for. This applies to wild plants and mushrooms (and many other things wild) as well, and what the people do not recognize, there is no name for it in the local language. It is simply avoided in many ways.
With locally identified names given in the video itself, a few plants are not recognized, and hence do not have a local name.

Brugmansia is poisonous, but some edible plants featured in this video include:
a. wild Himalayan cherry; Prunus cerasoides
b. wild Himalayan pear; Pyrus pashia
c. barberry; Berberis aristata
d. stinging nettle; Urtica dioica
e. golden Himalayan raspberry; Rubus ellipticus
f. hibiscus (nectar, and base of petals); Hibiscus rosa-sinensis
Mushrooms featured in this video are not identified as edible.
The beetle featured in the opening scene had injuries: one of its left legs was missing, and so was the tip of its right antenna. It remains unidentified as I have not searched for its scientific name. The wasp in the forest is identified as Polistes spp only.
