Harvesting Huge Cucumbers from our Front Yard Veggie Garden. Question for viewers: they are a bit yellow (not fully green), so do you think these are being harvested too SOON (not fully green yet) OR a bit too LATE (i.e., the green is fading towards yellow and I should have harvested them days ago, if I had seen them)??

  1. Cucumbers go from green to yellow and yellow is not what we want for optimum eating fruit. However, not all cucumbers get bitter. The main issue is big seeds and bitter skin. if you skin the cucumber and take the seeds out (like with squash) you may find the flesh is fine… or horrible.

  2. Those are awesome. There's a variety called Armenian Cucumbers that naturally grow three feet. Definitely get seeds of those. They're neat.

Those are not Armenian cucumbers.  What I have heard is that yellow cucumbers come from too much water.  Also have heard talk of nutrient deficiency, but that is not clear, no one agrees on what.  I got a few like this last year, and they were all yellow from the get-go.  I have to guess it is too much water.
