Love the yellow carrots. I would keep a few to eat and can the rest of both color carrots. As for the beets, I would pickle them. If you have the space beets do best with plenty of room to grow. I use a long row and make a 4" deep heel, run a stick down the middle of it, drop in the seed as if sowing it (like lettuce). Always had large, beautiful beets and a bountiful supply.

The yellow carrots did great! I haven’t been able to grow them. Next year I’ll try in the fall too!
What about planting carrots and beets in March to may?
