What month is he pruning?
@SusanLayland, I read you can prune either winter or spring, but I'm guessing he was pruning in spring since it seem most everthing else is dormant except those short green flowers growing next to where he was pruning. plus pruning in spring leaves the dried flower heads to stay on during winter, giving you some winter interest.
