One important addition to the sand technique: do NOT use the kind of sand they sell in hardware stores for sandboxes, as these contain chemicals to suppress any weed growth. not only do you not want this in your food, it also destroys whatever crop you put in there. get natural sifted sand, ideally from a building materials trade or bulk material storage, it is super cheap as well. my carrots, leeks, red beets and radicchios keep extremely well in this.
