  1. We had a really late start to summer here in NW Oregon. Even though our season then lasted extra long I didn't have a good tomatillo or tomato year, for the first time in many. Not great for my canning plans. But I also am still getting cucumbers! And my fall peas are doing fantastic. We're getting down into the 30s at night occasionally now.

  4. What kind of vinegar did you use for the salsa verde? Also I noticed you donโ€™t core your tomatoes, why?

  5. I bought tomatillo seeds to grow next year. I hope they do good. I made salsa Verde with my green tomatoes last year. I put it on a pork loin in the crock pot. It was moist and delicious.

  6. Just run the cooked down
    Tomatoes (skin/seeds & all) through the blender like you did with the tomatillosโ€ฆ also for a change of pace, roast the tomatoes before you cook them down- fire roasted pizza sauce- yummmmm!

  7. My body is old but my mind still wants to can, can, can. Love watching you plant, grow and harvest these products. I loved gardening and canning for my "fruit cellar". I had a good sized fruit cellar but doubt it would have held the amount of product you can. Enjoy these days of your life as they as so productive and useful. Useful for your food supply and extremely useful and educational for all of us. Hope and pray a lot of younger people watch this and glean all the information you are able to past along. God Bless.

  9. I know a chef that teaches a culinary class at a high school. They have a garden and he runs all of his tomatoes through a blender when they make tomato sauce. No straining and he says the sauce is great tasting and has the added benefit of a little more fiber with the seeds and skin. Your channel is terrific and inspirational.

  12. we had a large garden in our backyard growing up and our grandmother would can everything she could…we still had some canned figs, plums, tomatoes and such for a long time after she passed away..good living. thanks for sharing your life with us!!

  15. Great video as always, love the way you all live. Here's a question for you on something that I saw posted from the USDA. I just saw a video posted about the "USDA Banning Canning Lids Off Grid Living In A Tiny House". Have you seen this and is this going to effect you at all. I truly hope not because now agencies are meddling in personnel affairs they have no reason to be. Wasn't sure if this was going to effect you.

  16. I throw 8 oz of fresh mushrooms in the mini food processor until they are pretty fine. I then saute them in olive oil and add them to a lb of 90% lean ground meat. It softens the texture of the meat and adds adds tons of flavor to a pasta sauce!
