I think with that much land, it would make sense to at LEAST keep some chickens for the fresh eggs. Maybe also some flightless ducks later (I'm told their eggs are vastly superior to chicken eggs by friends who raise them, and I recall you mentioning plans for a pond already, though that may have been a joke). Chickens especially will largely take care of themselves, and you can set up automated feeders and doors for their coop if needed. That little outbuilding would be ideal for a starter coop, it'd take practically no effort to straighten it out and brace it so it doesn't lean again, and your future garden is already fenced enough for the chickens to have the run of it.
When you say "container" do you mean an actual shipping container? Or do you mean something like what in the US we would call a mobile home (a pre-manufactured house that arrives fully finished on a truck or trailer)? Or do you mean a camper home like an RV or caravan of some sort? I got a little confused listening to your plans… were you saying you'd move into the container in January 2023, or not until 2024? Or was it that you were going to move into temporary housing right away but weren't going to move into the farmhouse until 2024?
It seems like regardless of what temporary housing solution you find, though, the priority for the coming months should probably be to get first the ground floor bathroom, and then the kitchen to a point where they're fully functional. Once those two things are done, then at least you could theoretically live in the house unfinished if you absolutely had to, so you definitely wouldn't miss your deadline. It's admittedly not the most comfortable thing in the world to live in a home that's still under construction, but it's certainly doable so long as there's a decent bathroom, temperature regulation, and the necessary components for a kitchen. The bathroom comes first because it's not only necessary for using the toilet on site, but it's what allows you to wash off the filth and aches of construction and feel human again at the end of a long day. The kitchen comes second because it's the heart of the home and having it finished makes everything else feel easier. Or at least, that was my experience when I tried living in a house under construction.

Many here in the states have temporary housing on construction/renovation sites. However, you do also run into the problems of cost and time to move it in, hook it up, and maintain it. Be aware of these setup costs.
"I told you so." Now that that is out of the way, I'm glad you are taking the "do it right the first time" approach. It saves time, money, and heartache in the future. You don't have to shoot for perfection, but you shouldn't settle for good enough.
These Kamikoto knives get quite scathing reviews. I posted a link to one of them in a previous comment, but then the complete comment was removed, so viewers should probably google for the reviews of the knives themselves.
The knives are not made by craftsmen in Japan, as the company wants us to believe, but in China. The blades are made out of a very soft steel, leaving them to get dull very quickly. Of course every knife that comes right out of the box will be sharp, but for a demonstration of the quality of a knife, one should use a specimen that has been intensively used for a month or more. The '19 steps' in the production process also include the mining of the iron ore, the burning of coal, and at least three quality controls. Checking the quality is OK off course, but it's not part of the production process but only a check whether the production was done properly. The '19 steps' are a deliberate exaggeration, and in fact the brand is not transparent about the production process at all. These knives moreover do not turn up in any rankings published by specialist magazines and websites.
It should off course also be taken as an alarm call when a company itself offers their product at a discount of over 80%. And even at the discount prices, the knives are more expensive than their much better counterparts by established Japanese manufacturers. The brand was first registered in 2016 (not over 800 years ago), and is owned by a Hong Kong based company. The company's address in Tokyo is in fact a hotel. These Chinese knives are most likely a scam. Please be advised before ordering one or more of them.

We lived in a camper for 6 weeks while digging out the basement on our 100 year old family farm. If you can try to put the camper in a barn for greater protection from the elements. It makes a huge difference in rainy or cold weather and it keeps a lot of dirt from getting tracked inside. We put our couch outside the camper and also had a table and chairs outside the camper but it was all still under a roof inside the barn.

As someone that has been involved in a lot of renovations over the years, we always shudder when the homeowner sets a Christmas deadline. For whatever reason, that always seems to mean the project is guaranteed to NOT complete on time. You guys are doing great, kind of glad it's taking you guys so long, that means we get more videos 😃
I would say as long as you have easy access to bathroom/shower, electricity, and a way for heating/cooling, it is totally possible to be on site and help get the renovations done. It may not be much fun for the children but if there's things available like summer camp or some kind of children's programs where they have activities away with other kids, it might not be so boring for them all the time. Just take your time to getting things done right. It will be well worth it in the end.
