I love your excitement for the peppers! This year I’m growing a bunch of different varieties of peppers too. I just ordered a bunch of rare pepper seeds. I am hopeful that I get some amazing plants and a great yield.
Hi Josephina, try 'San Marzano' tomatoes and '10 Fingers' from Fruition Seeds. These two varieties are longer, Roma types and are exactly what you are looking for for flavorful cooking tomatoes that are meaty and produce a deep sauce that is not watery. They have another variety called 'Italian Heirloom' that grows BEAUTIFULLY and gets very round and large but makes a slightly lighter sauce . All these varieties are the determinate varieties that ripen all together in a 1-3 week period and are known for making sauces that are richer, less watery and you don't have to cook down as long. I am so looking forward to your experiences with the Poblanos. Oh how I love Chiles Rellenos. I had trouble with the leaf footed stink bugs troubling my tomatillos. What is up with that. Those dang bugs were obsessed with my tomatillos. I going to try them again in 2023 after I figure out how to control those leaf footers. I live in NC

If you let a few of the tomatillo's and ground cherries fall on the ground and leave them there they will come back the next season.
