Anybody know what type of plant this is? It randomly grows in my yard almost every year during the summer. I heard the roots are medicinal from people but I kind of want to know exactly what it is

Looks like some species of Helianthus, what state/region do you live in?

If the roots look like a mix of ginger and potato it’s a Jerusalem artichoke or sun choke. The roots of Jerusalem artichokes are edible and delicious but beware, they cause gas.
