They’ll go yellow and then brown. I picked mine when they have a lot of brown on them. You can lightly squeeze them when yellow/brown and feel how the skin is off the inside center.

I agree with u/MLione. Cover them with fabric overnight if frost is in the forecast. Try to leave them on the vine as long as you can.
