Help! what can I make with all these Roma tomatoes and jalapenos? I’ve already made salsa, jalapeno poppers, and pickled jalapenos.

    You can make a couple of tomato pies with jalapenos and freeze them. You could also blanche and freeze the tomatoes or make red sauce. Good luck, sure are beautiful.

    Blanch them, then purée, then free for chili in the winter. That’s what we do

    Diablo pasta sauce! Easy to make and freeze for later use.

  5. You can peel and jar the tomatoes whole. Smoke the jalapenos to make chipotle peppers. Turn the jalapenos into a mash with 3-5% salt by weight then ferment them and blend it with vinegar and strain it for hot sauce.

    – Tomato bread.
    – Cowboy candy.
    – Fresh tomatoes are great for tomatoes and eggs. There’s Asian recipes as well as Mexican recipes.
    – You can use the jalapeños for armadillo eggs.
    – Baked/smoked/grilled bacon wrapped stuffed jalapeños. I love just splitting then in half, seeding then turn stuff with a mix of cream cheese, favorite shredded cheese or queso and cooked chorizo.
    – Fried jalapeños. Do then either like fried okra or onion rings.

    Get one of those manual tomato sauce makers that squish the tomatoes and filter them into a pot for boiling. Once the sauce is made, add whatever pasta you want to it.

    Julienne the bell peppers, cut the beans into smaller pieces, cut up some of the jalapenos as well and make a stir fry. Add rice cooked from a separate pot or rice cooker afterwards

    Do you have a dehydrator? I slice jalapeños, and dry them for a few days in the dehydrator, then put them in the food processor with kosher salt to make a flavored salt. Tastes amazing on pretty much everything – eggs, mac & cheese, popcorn. As long as you make sure to dehydrate thoroughly, it will keep forever in a mason jar.
