You can make a couple of tomato pies with jalapenos and freeze them. You could also blanche and freeze the tomatoes or make red sauce. Good luck, sure are beautiful.

You can peel and jar the tomatoes whole. Smoke the jalapenos to make chipotle peppers. Turn the jalapenos into a mash with 3-5% salt by weight then ferment them and blend it with vinegar and strain it for hot sauce.

Get one of those manual tomato sauce makers that squish the tomatoes and filter them into a pot for boiling. Once the sauce is made, add whatever pasta you want to it.
Julienne the bell peppers, cut the beans into smaller pieces, cut up some of the jalapenos as well and make a stir fry. Add rice cooked from a separate pot or rice cooker afterwards

Do you have a dehydrator? I slice jalapeños, and dry them for a few days in the dehydrator, then put them in the food processor with kosher salt to make a flavored salt. Tastes amazing on pretty much everything – eggs, mac & cheese, popcorn. As long as you make sure to dehydrate thoroughly, it will keep forever in a mason jar.
