See courgettes are humbling because the big ones Look really impressive but the never taste as good and the small crooked ones 😂! That’s why people grow marrows for size competition rather than to eat. Hats of to you though it takes time and hard work to grow one that big and not have it eaten by pests xx

My favorite zucchini soup recipe, which freezes super well. I like to serve it with cream (but don’t freeze cream with it, just add later after reheating). (4 portions)
1 tablespoon olive oil
1 medium onion, chopped (1 1/2 cups)
2 minced garlic cloves
2 teaspoons curry powder
1 large potato, peeled and diced
2.5 cups zucchini, diced
4 cups low-sodium chicken broth
½ teaspoon salt
¼ teaspoon freshly ground black pepper
Directions
Step 1
In medium saucepan, heat oil over medium heat. Add onion; cook about 7-8 minutes, stirring occasionally. Add garlic and curry powder; cook, stirring, until fragrant (about 1 minute). Add remaining ingredients; heat to boiling. Reduce heat and simmer, covered, 20 minutes. When soup has cooled, blend and serve, or freeze into portions.
Nutrition Facts
Per Serving: 151 calories; fat 4g; saturated fat 0.6g; mono fat 2.5g; poly fat 0.5g; protein 6g; carbohydrates 25g; fiber 4g; iron 2mg; sodium 375mg; calcium 54mg.

When they get this big because I failed to find them earlier, I do one of 3 things:
1. Remove seeds and grate the flesh;
2. Remove seeds, scoop out cavity and fill/treat like stuffed peppers (same ingredients) and bake; or
3. Give to neighbors to do #1 or #2 above.
This time of year, it’s easy to miss these MOABs growing beneath the huge leaves of any cucurbit!

Congrats. Well done! Im starting to grow my own vegies too so know how hard it is to get the balance right and then once you get some you have to protect it from the birds, etc
