    Carrots are biennial. The second year (and, to a plant, this counts) they don’t concentrate on roots, they want to use all that energy to leaf out, flower, and set seed. So replanted carrots are an excellent source of cut greens (which I don’t greatly enjoy, but they are an interesting herb and animals love them) and a very cool way to grow and save your own seeds.

    It’s a fun experiment, but yeah they don’t do much but grow foliage. There are other things you can regrow from grocery scraps though. My favorite is planting the tops of pineapples, and you can even quarter them to get four plants from one top! Potatoes and sweet potatoes that sprout before you get around to eating them can be planted too, so can ginger root.

    Sorry if this is stuff you already know, I just think it’s neat!

    I laughed out loud at this! If it makes you feel any better, carrot greens make a cool (but weird, but cool) pesto! It’s great swirled into yogurt or hummus with a little bit of olive oil, then used as a dip.

    Just so you know ALL those greens are edible and great in.I chop them fine and sad to bean soup or chic noodle type soup.

    Hey! You can always take the carrot top greens divide them into even portions and freeze to use in stocks and broths. I love to add carrot greens to our veggie broth but we’re all out!
