I waited far too long before planting with a moss pole I think. The stems are thick and growing in different directions. Will it eventually train itself upward?

It will eventually with patience you can also put moss in between gaps of roots and the pole to guide the root growth into the pole
Also, if you can, I would put the Velcro around the trunk instead of the petiole
