My chickens would destroy that in no time flat, but I agree with others – zucchini bread/muffin time! I’d probably batch some muffins and freeze them for future breakfast.

Zucchini Parmesan fritters
* 3 large zucchini, finely grated
* 1 teaspoon salt
Batter:
* 1 large egg
* 2 tablespoons all-purpose flour
* ¾ cup Parmesan cheese, grated
* 3 Tbsp. chopped roasted red pepper
* ¼ teaspoon salt
* ground black pepper to taste
* oil for frying
Toppings:
* 1 cup sour cream or Greek yogurt
* Roasted red pepper, chopped
* Tabasco sauce
Grate zucchinis and place in colander, sprinkle with1 tsp salt and stir to distribute. Allow to sit for half an hour.
Roast red pepper until skin is charred. Place pepper in paper bag to finish cooking and chill. Remove charred skin and chop. Set aside 3 Tbsp roasted pepper.
Place sour cream into a blender or food processor along with remaining red pepper and process until combined. Add Tabasco to taste. Set aside while making the fritters.
Squeeze handfuls of zucchini to remove liquid and place in a bowl. Add some of the chopped red pepper, egg, flour, Parmesan, salt and black pepper. Stir to combine.
Heat oil (enough to be about ¼ inch deep) until hot. Drop zucchini batter into oil and press to flatten. Cook in batches until starting to brown, about 2 minutes, then flip and cook other side. Remove from pan and place on absorbent towel while you cook the remaining fritters.
Serve with Red Pepper Cream.

Supposedly when you let a plant pump out a mega zuke, it pretty much stops producing new fruit afterward.

Grill it is fine, just cut the seeds out, they are too big and wont taste good.
