So I’ve had half an onion in my fridge for about a week. Went to pull it out and it’s grown roots and sprouts. Could I plant this? To maybe grow more onions. What would the process be if I can?

I haven’t had any luck with that.
It appears as tho you already are!
I tried it in pots and window boxes, never had any success. But since this doesn’t really cost you anything, give it a try
Seeing as how it’s growing its self… lol. Do it! Green onions are great to have in a pinch.
So the onion will not produce another bulb if planted, but it will throw a flower stalk that gives you seeds. You plant those seeds for more onions.
You can harvest the greens until then, however.
