I use it for sautéing greens, or for frying onions and garlic before making a sauce.

Use it as a cooking fat like you would olive oil or butter or vegetable oil.
You can use it to season a cast iron pan as well.
Some people also use it as the fat they cut into biscuits.

I do use it for these things mentioned but still make more than I use. A follow-up questions would be how long is it good for.
I am under the impression as long as it doesn’t smell bad it’s fine.

I use it for fire starter. Slopping some of that I to some paper or sticks to get it going really can help and it smells nicer than starting fluid. Better to cook on after too if you’ve got the desire or the means

I use it to fry eggs, and grilling veggies in cast iron.

Makes an excellent steak.
I’ve also seen it used as a salve for animals with skin issues. Specifically my dad’s Pyrenees that had a little mange.

My sister and law used some in chocolate chip cookies once. Don’t do that. They were gross.

I use it for frying up johnny cakes for breakfast every now and then. Basically cornmeal pancakes.
also, spinach salad with bacon and a bacon vinaigrette [like this](https://www.allrecipes.com/recipe/25165/wilted-spinach-salad/). I leave out the eggs and green onions, and I like to add slivered almonds and dried cranberries. and even without a spinach salad to put it on, bacon vinaigrette is just plain delicious.

I like to make wilted lettuce with it. Use loose leaf lettuce (I prefer black seeded simpson), not iceberg or romaine. Heat a few tablespoons (depending on salad size) of the bacon grease hot and pour over the cut up lettuce. It should sizzle. Salt as needed and eat with spring onions. I like to pair it with soup beans, cornbread, and fried potatoes.

What’s old bacon grease? I’ve heard of bacon grease but never old bacon grease. I can’t even imagine such a thing.
Make gravy, saute stuff… Shucks except for baking… Bacon grease replaces cooking oil…

Might be shorter to tell you what I DON’T use it for, but here we go…
For basically everything I used to use butter or olive oil for. Use it to sauté or in pastries, cookies, and pie crusts.
Pork tallow has a wicked high smoke point, so you can use it to make a super rich extra dark roux without burning it. That’s one of my secrets that puts my gumbo on another level.
You can also use it as a fat to mix in with leaner meats when making sausage.
If you really wanna get froggy, you can also use it to make moisturizers like lotion and lip balm. It’s also perfect for making soap.
I also use it as machine lubricant. But only on exposed stuff outside since it will go rancid eventually.

Cornbread, green beans, dried beans, cooked greens, the list is endless. I follow a home cook on FB and he buys bacon grease which he uses in a lot of his crock pot meals. A lot of the meals are chicken-based.

Cook lots of things with it.
Bacon grease is tasty and healthy according to Dr. Gundry and all the low carb people. It doesn’t spoil easily even at room temperature.
