These guys dislike bright lights and I don't want to bother them too much. They don't really chew on things so plants that are only poisonous when ingested should be OK.
No plant will survive this level of darkness. Dormice are nocturnal and would not be disturbed by a small LED daylight bulb on one side of the habitat to support a couple of plants for 8 hours during the day though. Spider plant, boston fern, plectranthus are some recommendations.
