From Garden Weed to Fresh Salad #ameyawcancook
I recently discovered that the purslane growing in my garden is actually edible. Instead of pulling it out like a weed, I decided to turn it into a simple fresh salad.

I picked the leaves, washed them with water and vinegar, and spin-dried them. Then I added chopped cucumber and some cherry tomatoes.

For the dressing, I added avocado oil into a jar, mixed in apple cider vinegar (infused with ginger, turmeric, and black pepper) then added a little salt, black pepper, and honey. I sealed the jar and gave it a good shake before pouring it over the salad.

Purslane is rich in omega-3 fatty acids, antioxidants, and vitamins A, C, and E. It also contains minerals like magnesium and potassium. People prone to kidney stones or with kidney issues should limit it because it contains oxalates, and pregnant women are often advised not to eat large amounts. #purslane #salad

    I have purslane all over my yard and it's delicious, it's so cool to me that we're eating the same yard weeds in the western US and in Ghana
