Due to apartment living, I’ve grown fond of 5 gallon buckets for a garden. This year, I want to grow a few more colder plants ( lettuce specifically, maybe some beans) do you think I could fit lettuce and a pepper in a 5 gallon bucket?

That is a tough combination; peppers thrive in the heat and lettuce is not fond of heat. I think kale would be better with the pepper.
Drainage?
