Planted my first ever tree about three weeks ago (red baron peach) and it seems happy so far. I’m concerned about this significantly lower left branch and I would appreciate any advice on trimming it and any future care tips I should consider. I plan on adding a mulch volcano soon to help keep the soil cool and retain some water but aside from that I’m a novice. Megazord the dachshund for size reference in the third pic.

Planted too deep. Mulch volcano is a terrible plan.
The best you can do for a newly planted tree is to not prune it. It needs time to get some roots established before the tree spends energy into compartmentalizing pruning wounds.
Reveal that root flare, give it a wide mulch ring so you don’t accidentally mow or weed whip it, make sure it gets water weekly until Fall, and leave it be until next winter season.
No mulch volcano, although I’m not certain if that is a joke or not at this point
