Kumquats are one of the only citrus fruits meant to be eaten whole — peel and all. Unlike oranges, the peel is actually the sweetest part, while the inside is bright and tart.
Most citrus peels are edible and rich in vitamin C, but the bitter white pith usually stops us from eating them. Kumquats are different: thin skin, minimal pith, and packed with flavor.
