They look good! The red will brighten up the further along they get, as others have said. They also mellow out a bit more as they ripen to bright red, but don’t let them sit so long they start to turn soft. If you like your peppers hotter, pick them while they still have some green or that burgundy-violet-brown-reddish in ’em, if you like them sweeter, let them go red-to-red/orange.
