Peppers starting to change colour but not the bright red I was hoping for. Are they going bad?

    Normal color change. Some will turn black then red

    Totally normal. Pepper ripening can go through many colors from green to brown to black to purple to burgundy to orange to red. And even having many colors all at once.

    They’ll get there. Give them another week or three.

  6. They look good! The red will brighten up the further along they get, as others have said. They also mellow out a bit more as they ripen to bright red, but don’t let them sit so long they start to turn soft. If you like your peppers hotter, pick them while they still have some green or that burgundy-violet-brown-reddish in ’em, if you like them sweeter, let them go red-to-red/orange.
