Can someone tell me about the trees on the right. What kind they are. How they get shaped this way or do they grow like this? I’m having a devil of a time getting any info on them. Thanks

When people trim trees like this it is called topiary, sometimes they are shaped using wire as well. They can be called lollipop or box trees. Think of it like a larger full scale version of bonsai. Some popular varieties used for topiary are boxwoods (eg english or japanese), conifers (juniper and cypress), yews and privet.
