Hello. I buy a house 3 years ago. And there is some land and garden, so first now I manage to prioritize fruit trees and berries.I need some advice and feedback what to do and not to do. I have zero experience to trim fruit trees. As you see last owner for whatever reason just chopped the tress by the stam. They give some yield but not great. I hope I can make them good.

You’re in luck, it looks like previous owners were maintaining it.
You want to take the height and any central branches away as well as the height of the lower branches. You want the centre of the tree to be open as much as it can be and not have any crossing / rubbing branches. Usually recommended to cut 25% this year and another 25% next year.
Not an arborist (I just like to garden and like trees), but I do know that you shouldn’t cut or trim trees when it’s freezing.
