
I've had this guy for a few months, and he seems to be doing well.
I'm not really sure when to water it. I've been letting the soil completely dry and then waiting a week or two before watering.
Are there any good signs to look for to more confidently know it's time to water?

Your system sounds like it’s working, so stick with that. In spring and summer maybe water more frequently to encourage growth periods. I have the same plants in your picture as well. I water once a week, sometimes every other) but they are in all stone and no soil. With yours, waiting until the soil is dry should be a great way to time it. When in doubt wait a bit longer. The Euphorbias seem to like water more often than the aloe or cactus. So real what you are doing sounds fine. You could try waiting only 1 week after the soil is dry and see how that goes. Also, the plant will start to look less full or plump, pretty much visibly dehydrated looking when it is really in need of water.
