If you want a pantry that truly feeds your family year-round, it doesn’t start in August with canning — it starts right now with garden planning.

In this video I share the seeds I’m growing this year and why I’ve chosen each one with preservation in mind. From tomatoes for sauce and salsa, to storage onions, carrots, beans, and more — every variety has a purpose. I walk through how I decide what’s worth the space, what stores well, what cans beautifully, and what we actually eat.

This is the beginning of my pantry plan for the year — thinking ahead to sauces, soups, fermented vegetables, freezer meals, and jars lining the shelves next winter.

If you want a garden that supports real meals and long-term storage (not just pretty harvest baskets), this is where it starts.

  1. I am about to give up on organic gardening and get some good old pesticides. I am basically growing a squash vine borer colony and not any actual squash. It has been very defeating.

  2. Parsley is something I use more than I thought I did. I prefer celery leaves but our climate is too hot for any good celery. I'm trying tarragon, which we use a lot, but that is tricky for us as well.

  3. Oh…darn. I won't be able to join in the Feb 20th call in….. I'm going to be making final preps to my tomato transplants going into the garden.

  4. Turnip chips, thin slice with mandolin, freeze dry, sprinkle with salt or Tajin. They are yum.

  5. Glad to see you not giving the blanket "start seeds now" video's a lot of the other channels have been putting out, not considering differing zones. I won't be starting seeds until sometime in March, as I won't be planting until mid early to mid May.

  6. Hi Chelsea, your enthusiasm for gardening is contagious, wants to make me go buy all the seeds and plants right now. I love your garden, especially the flowers. I am planning on growing wild flowers this year and hopefully some veggies.
