I want to grow strawberries indoors or in a greenhouse, but I'm having trouble finding resources that provide detailed information. Things like skeletal system selection, seedling type selection, fertilizers, diseases, etc. Where can I find infographics, books, videos, and other content that can help with this?

A facility manager would know all that. If you go big scale without knowing even the basics, it will be an expensive project where you push money in and maybe even have some costly fails while you figure it out. So better to find someone with experience at least to guide you through setting all up and teach you some basics at least during the first crop. And depending on scale you will need help anyway. So better find the right people.
