Hello! As you can see I have some potatoes here, and I think as a result of them sitting in the bag for too long they’ve started to sprout really nicely. I think it’s like an accidental little greenhouse.

Anyway, I’d hate for them to go to waste, but there’s still snow on the ground outside as I live right outside of NYC. I’ve seen people grow potatoes in cardboard boxes and Trader Joe’s bags, which I would love to try this upcoming year, but I worry it’s too cold out for that right now.

Any thoughts on what I can do with them?

    Put them in a 5 gallon bucket and move them inside at night and outside during the day. Works for me but I live in Florida I’m not sure where you are.

    Knock the sprouts off and eat them.

    Friendly reminder if you move them inside the greens are poisonous to cats I believe!
