It is so much easier than you may think to overwinter carrots in the ground. When my pregnant daughter called, craving carrots, I headed straight to my winter garden to show you how easy it is to harvest fresh, sweet carrots even when the ground is frozen solid.
This method means NO root cellar needed – just leaves, mulch, and garbage bags to keep your carrots fresh and harvestable all winter long.
Kylene’s Homemade Ranch Dip
2 cups sour cream (or a combination of cottage cheese, buttermilk, or mayonnaise)
4 cloves garlic, crushed (freeze-dried or fresh)
½ teaspoon dried parsley
½ teaspoon dried dill
½ teaspoon dried chives
½ teaspoon crushed onion flakes (or onion powder)
½ teaspoon black pepper
½ teaspoon salt
Optional: A splash of tamed jalapeño pepper juice for a little spice and extra flavor
Combine sour cream with other bases you are using. I love this with cottage cheese. Add all dried herbs and spices. Mix well to combine.
Add a small splash of jalapeño juice for extra flavor and to help rehydrate the spices. Refrigerate for a few hours or overnight for the best flavor (the longer it sits, the better the spices rehydrate and the flavors develop).
Serve with fresh garden vegetables, chips, or crackers. Note: Fresh herbs are awesome in this. You may need to add a little water or milk to compensate when using dried or freeze-dried herbs to get the texture you want.
